I love fall and hot foods, so naturally, chili is one of my faves. Thought I'd share my favorite recipe. I just throw it in the crock pot and call it good:
Robyn Webb's Cosmic Chili Recipe:
Heat the oil in a large, heavy saucepan over medium-high heat. Add the turkey and cook about 5 minutes until browned, stirring to break up any lumps. Drain off all but 1 teaspoon of the oil.
Add the oinion, green pepper, and garlic to the pan and cook for 3 minutes, stirring often.
Add the chili powder and cumin and cook for 1 minute. Add the tomatoes and bring to a boil. Reduce the heat to low, cover, and simmer, stirring occasionally, for 20 minutes. Add the beans, salt, and pepper, and cook for 3 minutes more.
Serve each portion topped with some of the cheddar cheese.

Ingredients:
1 tablespoon olive oil
1 pound lean ground turkey
1 medium-size onion, peeled and diced
1 medium-size green bell pepper, cored, seeded, and diced
2 garlic coves, peeled and minced
1 tablespoon chili powder (or more to taste)
1 teaspoon ground cumin 1 can (28 oz.) crushed tomatoes
1 can (14 oz.) kidney beans, drained and rinsed
Salt and pepper to taste
1/2 cup reduced-fat shredded cheddar cheese
